Cajun Chicken Avocado Sandwich (Rosemary Bread)


Inspired by my Whole Foods adventure this afternoon, I whipped up a healthy sandwich (I think?). This is excellent as a late lunch, or midnight snack!

Recipe:

  • 2-3 Chicken Breasts (Use Blackened Cajun Chicken Rub, Sear in Sautee pan for 3 min on each side and Pop pan in 350 Degree oven for 10 minutes)
  • White Wine/Chicken Stock/Cajun Reduction Sauce – after removing Chicken from pan, deglaze pan by adding 1/4 cup of white wine.  Bring to boil and add 1/2 cup of chicken stock. Add a pinch of cayenne and reduce by half over medium heat. Remove from heat, add cream/butter if you wish and place aside.
  • 1/2 Avocado (Sliced)
  • 2 Slices of Homemade Rosemary Bread (no egg, butter or milk!!)
  • Kale or Romaine Lettuce
  • Assemble all items above on toasted bread, drizzle reduction on chicken or bread (or serve on side) and enjoy!!
